Step 3. While the meat is marinating, prepare the additives (at your discretion). Fry mushrooms (forest mushrooms should be boiled beforehand). Grate the cheese (if you use the Adyghe cheese, cut it into cubes). Thinly cut the tomatoes and olives into slices, finely chop the greens.
Step 4. Spread as many strips of bacon as necessary to wrap each piece of meat on a flat surface.
Step 5. Place the meat on one side, the additives on top and roll it all into a roll.
Step 6. Cut a strip of baking paper of the appropriate width and wrap the roll in it. Do not pinch the edges! This is necessary so that excess fat would drain. Place on a baking sheet.

Step 11. Dissolve the tomato paste with a spoonful of water and add to the sauce. Add vinegar, horseradish, dry adjika there, salt, pepper and mix thoroughly. Add some sugar (to taste). Place in the refrigerator.
Step 12. Take the rolls out of the oven, remove the paper and place on plates. Garnish with fresh herbs and serve separately. Any vegetables can be served as a side dish.
