Have you ever cooked meat on charcoal … in a towel? But in Colombia, this is the most common cooking method. With a minimum of ingredients, you will get an amazingly tasty, soft and aromatic dish!
It is necessary
- For 6 servings:
- - 525 g of beef tenderloin;
- - 3 tbsp. coarse salt;
- - 1, 5 tbsp. dried oregano.
- - cotton towel 40x40 cm;
- - twine.
Instructions
Step 1
Prepare a waste cotton towel by dampening it well in cold water and wringing out thoroughly. Of course, even though you are using an old towel, it must be clean!
Step 2
Unfold the towel and sprinkle 3 cups of coarse or medium salt on top of it. Even out the salt: the layer must be even! Sprinkle with dried oregano on top.
Step 3
Place a piece of beef tenderloin on one end of the prepared towel. Wrap the meat in an envelope-like cloth. Secure the envelope with cooking twine and place on hot coals. Cook for about 15 minutes on each side. You can also cook your meal using gas. If the towel starts to char, it's okay, continue the process.
Step 4
Leave the cooked meat to "rest" for 2-3 minutes and only then unfold the towel. Simple juicy meat is ready! It can be served just like that or with your favorite sauce!
