Even the name of a sweet dessert gives rise to appetite and a desire to try it sooner. American Apple Pie - sounds like a song: thin, crunchy dough with lots of crumbs and a viscous, juicy filling of sweet and sour sugar apples.
There are several versions of the American pie: with peaches and apricots, with cherries and chocolate, with blueberries and raspberries. And also with candied fruits, orange jam and even kiwi. A pie with different fillings can be called a roll, strudel, charlotte, cupcake, etc. But in the classic version, which was actually invented in America in the 18th century, there are no other names other than the American apple pie.
Since the 19th and 20th centuries, a simple apple pie has been considered a true symbol of American cuisine. How to properly prepare this sweet piece of national pride?
Ingredients
- premium flour - 300 g;
- sweet apples - 1, 1 kg (6-7 pcs.);
- sweet butter - 180 g;
- lemon juice - 20 ml;
- starch - 1 tablespoon;
- granulated sugar - 250 g;
- salt - at the end of the knife;
- water - 80 ml;
- cinnamon - a pinch;
- egg - 1 pc.
Cake recipe
- Cool margarine or butter and chop into cubes.
- Sift the white flour and mix with a pinch of salt with a spoon. Place the butter cubes in the flour and rub with your hands until crumbs are formed.
- Mix lemon juice with water. Slowly, while stirring, pour all this into a mixture of crumbs of butter, salt and flour.
- Knead the dough of the future pie with your hands until smooth. Roll it into a tight ball. Wrap the dough with foil and send to a cool place for half an hour.
- While the dough is cooling, wash the apples, peel them off (optional) and remove the seeds. Cut each apple half into 5 slices.
- Drizzle the apple pulp with lemon juice and cover with granulated sugar mixed with starch. Stir the filling until the sugar begins to dissolve. Add ground cinnamon (substitute nutmeg if desired).
- Divide the dough into three equal parts. Connect two of them and roll them on the table with a rolling pin into an even circle.
- Grease a baking dish with fat or butter and sprinkle with flour. Heat the oven to 180 ° C.
- Spread the dough over the bottom of the mold and pierce the bottom with a knife over the entire area. Place the apple filling on the dough.
- Roll out the remaining piece of dough and place it on the filling. Pinch the edges of the cake tightly and twist, gluing them around the perimeter. Make a hole in the center.
- Beat the raw chicken egg with a fork and brush the top of the pie with a brush. Cover the entire dessert with foil.
- Send the baking sheet to the oven and wait 25-30 minutes, then carefully remove the foil and put the pie back in the hot oven.
- 10 minutes before being ready, grease again with an egg and sprinkle with sugar or powdered sugar. Decorate with a pinch of cinnamon.
- Serve whole on a flat serving platter.
