  • Ravioli:
  • - 125 g flour;
  • - 2 chicken eggs;
  • - 1 yolk;
  • - 1 tbsp. sweetened cream;
  • - 100 g of spinach;
  • - salt;
  • - a pinch of nutmeg;
  • - 100 g of soft curd cheese;
  • - 100 g of spicy cheese.
  • Sauce:
  • - 1, 5 shallots;
  • - 1 large clove of garlic;
  • - 1 tbsp. olive oil;
  • - 125 g thick sour cream;
  • - 1 bunch of parsley;
  • - dry basil.

Instructions

Step 1

Sift flour into a cup and add 1 egg, yolk, salt and nutmeg to it. Knead the dough out of these ingredients, wrap it in foil and leave for 1 hour.

Step 2

Wash the spinach, pour boiling water over it, then cold water and chop finely. Combine curd cheese with spinach, egg, salt and 70 g of hot cheese.

Step 3

Remove the ravioli dough from the foil and roll out thinly. Using a toothed shape, cut out circles from it, lightly moisten their edges with water. Place the spinach cheese filling on half of each mug, close with the other half and blind the edges. Cook the ravioli in boiling water for 6-7 minutes.

Step 4

For the sauce, finely chop the shallots and garlic and simmer in oil for 3 minutes. Chop the parsley and add half to the pan with garlic and onions, put sour cream and dry seasoning there. Simmer everything together for another 2 minutes, then whisk the mixture in a blender.

Step 5

Serve the ravioli with the sauce, sprinkle with coarse grated hot cheese and garnish with parsley.
