In western Ukraine, this dish is called "Rumbambar Pie" and it is a very simple but tasty dish.
Ingredients:
- 6 eggs;
- 2 tbsp. Sahara;
- 200 g margarine;
- 3 tbsp. l. sour cream;
- 3 tbsp. flour;
- 1 pack of cookie powder;
- 1 tbsp. l. decoys
- 1 pack of jelly (optional);
- About 500 g rhubarb;
- Flour;
- Parchment paper.
Preparation:
- Separate the yolks from the whites. Set aside the whites, and beat the yolks with 1 glass of sugar. Margarine should be soft, therefore, first, 2-3 hours before preparing the cake dough, you need to remove it from the refrigerator.
- Add margarine and beat well with a mixer. Then pour sour cream into the suspension.
- Mix 2 cups flour with cookie powder and add a little.
- When the dough has become thick and difficult to beat with a mixer, add the rest of the flour and knead the elastic dough.
- Put the fourth part of the dough in a plastic bag and put it in the freezer. We put the rest of the dough in the refrigerator for 2-3 hours.
- Peel the rhubarb and cut into small pieces, about 1 centimeter. We take out the dough from the refrigerator.
- Lubricate the baking dish with a layer of margarine, stele parchment, grease it with margarine and sprinkle with flour.
- We put the dough in a container and gently spread it with our hands over the entire plane of the baking sheet, forming sides in the corners.
- Preheat the oven to 180 degrees. We spread the chopped rhubarb on the dough, sprinkle it all with semolina. Beat the whites well with 1 glass of sugar, add jelly if desired. Protein should be thick, like meringue. Pour the egg whites into a baking dish, spread well.
- Remove the dough from the freezer and rub it over the proteins on a coarse grater. We put to bake in the oven for 45 minutes.
Rhubarb can be replaced with apples, but then you should put half a glass less sugar to the proteins so that the cake is not very sweet.
