  • Butter -125 g
  • Wheat flour - 250 g
  • Salt - ½ tsp
  • Cognac - 75 ml
  • Egg yolk - 6 pcs.
  • Granulated sugar - 300 g
  • Ground cinnamon - ½ tsp
  • Ground ginger - ½ tsp
  • Grated lemon zest - 1 tsp
  • Cream 30-33% - 140 ml
  • Water - 100 ml

Step 1

Peel the pumpkin and seeds, cut into slices. You can cook it in a double boiler (20-25 minutes), or you can simply bake or boil it. Peeled pulp needs 400 grams.

Step 2

Prepare the dough: combine cold butter, flour, salt and chop everything together with a knife until crumbs form. If you have a blender, then it is better to use it. Add yolk, cognac and about 100 ml of very cold water. Knead the dough very quickly, wrap in plastic wrap and refrigerate for 30 minutes.

Step 3

Cooking the filling: pumpkin, cognac, spices and sugar are mashed using a blender or fork. Using a fine grater, remove the zest from the lemon, add the rest of the yolks, cream to it, and mix everything with pumpkin puree.

Step 4

Take the dough out of the refrigerator and place it in a wide dish with small sides, pressing along the edges to form a base for the cake. To prevent the base from swelling, we pierce it with a fork in several places and pour the beans to the top. We bake at a temperature of 200 degrees for 10 minutes, take out the beans and bake for another 5-10 minutes at 180 degrees.

Step 5

We take out the form with the dough from the oven, pour the filling on it and bake for another 30 minutes (the filling should completely solidify). Cool the finished pie completely, then cut into pieces. Sprinkle with powdered sugar if desired.
