It is necessary

  • For the test:
  • - flour - 250 g;
  • - butter - 180 g;
  • - icing sugar - 100 g;
  • - yolks - 2 pcs.;
  • - salt - a pinch.
  • For filling:
  • - pumpkin - 1-2 kg;
  • - sugar - 2/3 cup;
  • - cream 20% - 3/4 cup;
  • - juice of one lemon;
  • - eggs - 2 pcs.;
  • - cinnamon - 1 teaspoon.
  • Prunes in cognac:
  • - pitted prunes - 30 pcs.;
  • - cognac - 1/2 cup;
  • - sugar - 1/2 cup;
  • - water - 1 glass;
  • - vanillin - 5 g.

Instructions

Step 1

Mix the softened butter thoroughly by combining it with powdered sugar. Then add egg yolks one at a time there, whipping the mixture with a mixer after each. Add flour. Stir the mixture. This will create a shortbread dough. Place it in a plastic bag and send it to a cold place for about half an hour.

Step 2

Put the prunes in a saucepan with vanilla and granulated sugar. Pour this mixture with brandy and water. Cook over low heat, stirring constantly, for 15 minutes.

Step 3

With the pumpkin, do the following: cut the peel, chop into small pieces and boil. Then transfer to a blender and turn into a homogeneous mass, that is, puree. Add to it cinnamon, granulated sugar, cream, as well as the juice of one lemon and an egg. After each introduction of ingredients, mix the mixture thoroughly with a mixer.

Step 4

Remove the dough from the refrigerator and roll out. Then place it in a baking dish lined with a sheet of parchment and spread it over the entire surface, remembering to shape the sides. If cracks form in it, just seal them up.

Step 5

Cover the dough in the form with foil, and place dry beans on it. In this form, bake the cake for 15 minutes at a temperature of 200 degrees. After the expiration of the time, remove the "load" and cook for another 10 minutes.

Step 6

First, put part of the prunes on the finished cake, then the pumpkin filling. Bake the resulting mass for about 60 minutes at 180 degrees. Decorate the baked goods with leftover dried fruit. Pumpkin pie with prunes in cognac is ready!
