Step 1
To prepare dietary zucchini pancakes without eggs, you need a fine-mesh grater. Wash and, if necessary, peel the courgette, measure out about 300 grams of pulp. You will have to cut off the peel if the fruit is overripe, you will also have to take out the hard large seeds with a spoon. Young fruit with a delicate skin does not need to be peeled. Grind the zucchini prepared in this way on a fine grater. And combine with garlic grated on the same grater. Season with salt and season to taste.
Step 2
Add vegetable oil to vegetables, add flour mixed with soda, stirring the mass, gradually pour in water. Make sure that the flour is evenly mixed with the vegetables.
Step 3
Heat some vegetable oil in a skillet, about 1 - 2 tablespoons, being careful not to overheat so that the oil does not smoke. The resulting thick dough should be spread with a tablespoon in small portions into the pan. Fry until golden brown on both sides.
Serve the squash pancakes hot, warm, or cold with fresh vegetables and any sauce you like.
