These egg and cheese pancakes can add variety to your breakfast and go great with fruit, syrup, jam or chocolate. Unlike pancakes, they appear fluffier and smaller in size. Cooking them is not at all difficult.

Step 1
First you need to take the eggs and separate the whites from the yolks. Remember to take the eggs out of the refrigerator beforehand to keep them at room temperature. Then mix the proteins well with a pinch of salt with a mixer until a thick foam forms.
Put one egg yolk, vanillin, cheese, milk, lemon zest in a separate container and mix thoroughly.
Take another dish and add flour there. Flour should be sieved in advance to saturate it with oxygen. Then the pancakes will turn out to be lush and tasty. Then add baking soda, granulated sugar and salt. Mix this mass with the ingredients from the first container and stir until a homogeneous consistency is formed.

Then gently add the beaten egg whites and beat gently by hand.

Let the dough rest a little and settle. It will become fluffier and smoother.

Then, in a well-heated skillet, greased with butter, pour a small amount of dough with a ladle. Remember that the pancakes should be small.
Place some berries on each pancake as shown in the photo. You need to fry on each side for 1-2 minutes, until they acquire a golden brown color. When serving, you can sprinkle them with honey, condensed milk or jam.
