The original solution for regular shortbread cookies. "Dominoes" are not covered with ordinary sugar icing, but meringue from a protein powder mixture. Meringue powder has an advantage over raw egg whites - pasteurization ensures that there are no problems associated with raw eggs. This confectionery mixture is convenient to use in recipes where heat treatment of the protein is not required.

Instructions
Step 1
Beat butter with sugar until fluffy. Add eggs one at a time, beating the resulting mass after each. Add vanilla, beat until smooth.
Step 2
Combine the sifted flour with baking powder and salt. Add to the egg and butter mixture, stirring the dough thoroughly. Form a ball out of the dough, wrap in plastic wrap, put in the refrigerator for 2 hours.
Step 3
Roll out the chilled dough on a floured surface to a thickness of 0.5 cm. Cut the layer into rectangles about 4.5x10 cm in size, you get more than 70 pieces. Put the cookies on a baking sheet lined with parchment, place in the oven, heated to 175 degrees. Cook for 15 minutes, then remove the cookies from the baking sheet and cool on the wire rack.
Step 4
Whisk the meringue confectionery mixture with the water. Add powdered sugar, beat until smooth. Use the meringue frosting to draw the borders around the cookie, and then cover the middle of the cookie with a cooking brush. Decorate the cookies with dark chocolate chunks, creating the dominoes before the icing hardens.
Step 5
Ready-made Domino sugar biscuits can be stored in a hermetically sealed container for more than 1 week.
