It is necessary

  • For the basics:
  • - 150 g flour;
  • - 0.75 tsp baking powder;
  • - 55 g of sugar;
  • - 15 g vanilla sugar;
  • - 1 small egg;
  • - 75 g butter.
  • For the curd filling:
  • - 3 eggs;
  • - 115 g of sugar;
  • - 565 g of a quark;
  • - 1 pack of vanilla sugar;
  • - zest of a small lemon;
  • - 190 ml of milk;
  • - 40 g of corn starch.

Instructions

Step 1

First of all, you should prepare a form with a diameter of 20 cm, lining its bottom with baking paper and greasing the sides with melted butter.

Step 2

The butter for the base should be softened: remove it from the refrigerator about 40 minutes before cooking. When it becomes soft, whisk with the two types of sugar until fluffy. Then add the egg and beat thoroughly again.

Step 3

Mix dry ingredients: flour and baking powder separately. Pour them into the butter mixture and quickly knead the dough. Wrap it in plastic wrap and refrigerate for 60 minutes.

Step 4

To prepare the filling, divide the eggs into whites and yolks. Whisk the first to stable peaks with a third of the sugar rate, and mix the yolks with grated zest of a small lemon, the remaining sugar (both plain and vanilla), quark and milk until smooth (I do this with a food processor for 1-2 minutes) … Then add the starch and mix quickly again. Gently, using a spatula, combine the whites with the yolk mixture.

Step 5

Set the oven to preheat to 170 degrees. Remove the dough from the refrigerator and knead it in shape, forming sufficiently high sides. Put the curd mass inside and send to the hot oven. Bake for 1 hour 10 minutes, then leave to cool in the oven without opening the doors. Then put it in the refrigerator overnight and serve it cold!
