  • - garlic - 7 cloves;
  • - chili pepper - 0.5 tsp;
  • - cinnamon - 1 tsp;
  • - sweet paprika - 1 tsp;
  • - salt - 1, 5 tbsp. l.;
  • - sugar - 3 tbsp. l.

Instructions

Step 1

Prepare all the ingredients for making homemade ketchup. To do this, peel and chop the onions, wash the sweet paprika, cut, remove all the seeds and membrane, and then cut into arbitrary pieces. In a heavy-bottomed saucepan, combine the paprika and onions, the garlic cloves, peeled and crushed with a garlic press.

For ketchup, it is best to take ripe large tomatoes. Keep in mind that if the tomatoes are watery, the ketchup will need to be boiled down longer. Wash the tomatoes, and then pour boiling water, after a few minutes drain the water and pour over the tomatoes with cold water, hold for about 1 minute, so that the skin is removed without problems. In the future, cut out the stalk, cut the tomatoes into arbitrary pieces and put in a saucepan. You can also make tomato juice using a juicer. Remember that the amount of juice will depend on the tomato and its variety.

Step 3

Add tomato juice to a saucepan containing garlic, onion and paprika, and then bring to a boil for 1.5 hours over low heat. It is better not to cover the pan with a lid so that the water evaporates.

Step 4

Using a hand blender, beat this mixture until smooth, which will be quite thick. Then return the sauce to the heat for another 60 minutes.

Step 5

At the very end, you can add all the spices you want. To do this, chop the mustard peas in a blender, do the same with allspice and cloves. Then, when homemade ketchup has already become thick enough, you can add spices, mix well, and then taste.

Step 6

At the very last stage, vinegar is added. Now homemade ketchup is ready, it can be poured into pre-sterilized jars, which will need to be turned over and covered. Store homemade ketchup in the refrigerator.
