    • Warm hunting salad:
    • 300 g of "Hunting" sausages;
    • 2 potatoes;
    • 100 g fresh champignons;
    • 150 g parmesan;
    • red onion;
    • 4 pickled cucumbers;
    • parsley;
    • cherry tomatoes for decoration;
    • vegetable oil;
    • 100 g of natural yogurt;
    • 2 tablespoons whole grain Dijon mustard
    • 1 teaspoon wine vinegar
    • salt;
    • ground black pepper.
    • Hunter's salad with game:
    • 300 g of grouse or wild duck meat;
    • 2 small eggplants;
    • 3 tomatoes;
    • 2 sweet peppers;
    • parsley and thyme;
    • olive oil;
    • salt;
    • ground black pepper;
    • grains of pink pepper.

Instructions

Step 1

Try a hunter's salad with smoked sausages. Boil jacket potatoes, peel and cut into cubes. Peel the hunting sausages and chop them into thin slices. Cut 50 g of Parmesan into thin petal slices, grate the rest of the cheese. Cut the pickled cucumbers into cubes, the red onion into very thin rings, chop the green onion and parsley.

Step 2

Prepare the sauce. Add vinegar, Dijon grain mustard, salt and ground black pepper to natural yogurt. Mix everything thoroughly. Heat vegetable oil in a skillet and fry the red onion rings in it, stirring occasionally. When it turns transparent, add the mushrooms, cut into thin plastics, to the pan. Place the onions and mushrooms in a salad bowl and heat.

Step 3

Add a little oil to the pan, put the potatoes and sausages in it and fry everything until golden brown. Transfer the warm potatoes and sausages to a salad bowl. Add cucumbers, grated parmesan, green onions and parsley. Mix everything well. Spread the salad into portioned plates with a slide, pour over each sauce, garnish with thin slices of Parmesan and halves of cherry tomatoes. Serve the salad immediately, accompanied by dry red wine and toasted white bread.

Cold hunting salad is also very easy to prepare. Its peculiarity is the use of game, such as hazel grouse or wild duck. Remove the pulp from the bones, making sure that no pellets remain in the meat. Cut it into small slices and sauté in hot olive oil or grill until tender. The latter option is preferable - it will give the bird a spicy taste.

Step 5

Cut small eggplants into thin slices and brown them in hot oil. Place vegetables on a plate and refrigerate. Peel and cut the bell peppers into strips, and the tomatoes into thin slices. Chop parsley and thyme finely.

Step 6

Put all the ingredients in a deep salad bowl, add salt, ground black pepper and mix thoroughly. Place the salad in the refrigerator for 10 minutes, then place it in the serving bowls. Sprinkle each serving with mayonnaise, garnish with a sprig of thyme and pink peppercorns. Serve with chilled white wine and fresh cereal bread.
