Traditional Sweet Chili

To make 6 servings of sweet chili sauce, you will need the following items:

- 15 small chili peppers;

- 7 cloves of garlic;

- 400 g of granulated sugar;

- 40 g of salt;

- 4 tbsp. tablespoons of cornstarch;

- 800 ml of water;

- 200 ml of sweet rice wine.

Wash hot peppers, dry, remove seeds and tails, then cut into pieces. Place them in a blender and add the peeled garlic cloves. Chop until puree. Pour warm water into a saucepan, put on fire and add sugar. When the sweet water boils, pour in the rice wine and salt. After a couple of minutes, add the hot garlic and pepper puree. Simmer for a few minutes, stirring frequently. Meanwhile, dissolve cornstarch in 100 ml of cold water and pour it into the sauce in a thin stream, stirring constantly. Boil the sauce for a couple more minutes, and when it thickens, remove from the stove. Cool before serving.

Sweet chili with lemongrass and ginger

Ingredients:

- 2 chili peppers;

- 2 stems of lemon grass;

- 3 tbsp. tablespoons of vegetable oil;

- 2 cm of ginger root;

- red onion head;

- 2 cloves of garlic;

- ½ teaspoon of salt and sugar;

- 1 sweet red pepper;

- 300 ml of water;

- 1 tbsp. a spoonful of lime juice;

- 1, 5 Art. spoons of soy sauce.

Grate the ginger root, peel the chili pepper and chop finely, chop the peeled garlic and red onion. Heat vegetable oil in a saucepan, add lemongrass and all the listed ingredients. After a couple of minutes, add the sugar and salt and soy sauce. Cook everything over low heat for 5 minutes, stirring occasionally. Then add the red pepper, lime juice and cook for another 5 minutes. After the allotted time, pour in the water, bring the sauce to a boil and remove from the stove after a couple of minutes. When it has cooled slightly, transfer it to a blender and blend until smooth.

How to use sweet chili sauce

Chili sauce is great with any seafood and different types of meat. Moreover, it can be served hot and cold both for ready-made dishes, and used as a marinade. In addition, a few tablespoons of sweet chili can be added to tomato sauce for pasta, served as an appetizer with homemade pita chips, and used as a base for various soups and stews made from vegetables, legumes and meat. And, of course, this sauce is perfect for hot dogs.
