Appetizing azu is a well-known dish of the Tatar cuisine. It is made from beef, pork, horse meat and lamb. The simplicity of preparation and the availability of products have made it one of the favorite dishes in different families.
Azu in Tatar style of pork
products:
- 530 g fresh pork;
- 5 potatoes;
- 3, 5 tbsp. tomato paste;
- 3 heads of onions;
- 3 pickles;
- 2 pcs. garlic;
- a little greenery;
- vegetable oil for frying;
- pepper, salt according to your taste.
Rinse the pork thoroughly, remove the foil and remove the veins. Cut the meat into medium pieces. Rinse the onion, peel, cut into half rings and fry in a pan, add vegetable oil beforehand. Rinse the potatoes, peel and cut into small cubes. Fry it in a separate skillet until golden brown.
Combine potatoes, meat with onions, grated cucumbers and tomato paste (dilute in water before adding). Put everything in a deep frying pan, pour in water so that it covers all the ingredients. Add salt and pepper. Cook the basics over medium heat until the potatoes are completely soft. Sprinkle the resulting dish with chopped herbs and chopped garlic.
Homemade pork azu in pots
products:
- 530 g of pork pulp;
- 7 potatoes;
- 3 pickles;
- 3 heads of onions;
- 3 bay leaves;
- 3 pcs. garlic;
- some vegetable oil;
- 520 g of tomatoes in their own juice;
- pepper and salt according to your taste.
Rinse the pork pulp, cut into strips, peel the onion, cut into half rings. Fry the onions in a skillet until translucent, then add the pork, cook for about 6 minutes more. Fry the potatoes in a separate skillet, season with pepper and salt. Cut pickled cucumbers into wedges or grate on a medium grater.
Pass the tomatoes together with the juice through a meat grinder. Pour vegetable oil at the bottom of the pot and put the prepared ingredients there. First lay out the cucumbers, the next layer of meat and onions and potatoes. Place a bay leaf and one chopped garlic in each pot. Pour the entire contents of the pots with tomato puree, place in the oven preheated to 190 ° C, cook for 30 minutes.
Pork azu with rice
products:
- 3 pickles;
- 430 g of pork pulp;
- 6 tomatoes;
- 420 g of rice;
- 2 heads of onions;
- 2 pcs. garlic;
- some vegetable oil;
- salt, pepper according to your taste;
- a bunch of any fresh herbs.
Boil the rice until cooked through. Rinse the pork, cut into pieces. Peel the onion, chop finely. Wash tomatoes, remove skin, cut into small cubes. Cut the cucumbers into slices. Heat vegetable oil in a frying pan, fry the meat and onions in it until golden brown. Then add tomatoes and cucumbers there. When the pulp of the tomatoes has dispersed, fill everything with water. Salt, add pepper.
Simmer for 25 minutes over medium heat. Then add the rice, mix everything thoroughly and cook for another 6 minutes. Sprinkle the finished basics with herbs and pre-chopped garlic. Cover and let sit for 16 minutes.
