A very tasty lean dish, prepared quickly and simply, even the most inept hostess will be able to surprise with such a dish not only the family at lunch, but also the guests at the festive table. Having tasted mushroom soup with dumplings once, you will never stop pampering yourself and your loved ones with such a delicacy.

Broth ingredients:

  • 90-100 g fresh champignons;
  • 2-3 medium onions;
  • 1 carrot;
  • sunflower or olive oil
  • greens (parsley or dill);
  • salt to taste.

Ingredients for dumplings:

  • 1-1.5 cups flour;
  • ¼ a glass of water;
  • 2-3 tbsp vegetable oil (you can use olive oil);
  • ½ tsp salt.

Preparation:

  1. Let's start with cooking dumplings: pour flour into a deep bowl, fill it with boiling water and immediately mix very thoroughly. Add vegetable or olive oil to the bowl, salt to taste. Knead the dough with our hands.
  2. We roll out a tourniquet 1 centimeter long, cut into small "pads". Let the dumplings dry for 20-30 minutes on the plank.
  3. Cut the mushrooms into slices of medium thickness (2-3 mm).
  4. Stew the mushrooms in their own juice in a deep frying pan, after covering them with a lid. After 5 minutes, pour out all the remains of the mushroom juice that has not evaporated into a separate container.
  5. We continue to fry the mushrooms until tender, after adding 2 tablespoons of vegetable or olive oil.
  6. We cut the onions into small strips, sauté in the remains of vegetable or olive oil.
  7. In the pre-salted and already boiling broth, pour the juice that the mushrooms have released during frying. In one of the previous stages, we cast it into a separate container.
  8. Add mushrooms and vegetables to the broth. We are waiting for the water to boil.
  9. Add dumplings, then cook for another 5-7 minutes.
  10. It is better to serve soup with herbs. It is recommended to add both dill and parsley.
