- - 200 g of spaghetti;
- - 1 medium eggplant;
- - 1 tomato;
- - 4 cloves of garlic;
- - 2 tbsp. tablespoons of olive oil;
- - Italian herbs.
Instructions
Step 1
Boil the spaghetti in salted water until tender.
Step 2
Cut the eggplant into plates, then diagonally into long strips.
Step 3
Fry the eggplants in olive oil until translucent.
Step 4
Add the diced tomato to the eggplant. If you have small tomatoes, use a few. Just keep in mind - there should be more eggplants in terms of volume.
Step 5
Simmer vegetables until tender. Add finely grated garlic cloves. Season with pepper and salt to taste. Add a mixture of aromatic Italian herbs.
Step 6
Place the spaghetti on a plate, top with the prepared eggplant sauce.
