It is necessary

  • - 1100 g ripe tomatoes;
  • - 850 g canned tomatoes;
  • - 125 ml of olive oil;
  • - 160 g mozzarella;
  • - 65 g salami;
  • - 550 g eggplant;
  • - 95 g minced pork;
  • - 105 g of peeled and chopped chicken liver;
  • - 115 g frozen green peas;
  • - 55 g fresh basil;
  • - 125 g grated cheese.

Instructions

Step 1

Wash fresh tomatoes, peel and chop. Chop small canned tomatoes. Lightly fry chopped garlic in olive oil, then remove from the oil and discard.

Step 2

Transfer the chopped tomatoes to the garlic oil and simmer over low heat for 25 minutes, leave the lid on, stir and add a little water so that the mixture does not burn.

Step 3

Chop the mozzarella, chop the salami. Wash the eggplants and cut into long slices about 6 mm thick.

Step 4

When the tomato sauce is almost ready, heat 3 tablespoons of olive oil in another skillet and transfer the chopped chicken liver and minced meat into it. Fry them for 5 minutes, and then remove from the oil using a slotted spoon.

Step 5

Transfer the minced meat to the tomato sauce, add the frozen green peas.

Step 6

After 12 minutes, when the sauce has thickened thoroughly, add chopped basil to it and remove from heat. Boil the pasta separately.

Step 7

Fry the sliced eggplant pieces without adding oil for 3 minutes on both sides. Then brush each piece of eggplant with olive oil and transfer to a baking dish.

Step 8

Transfer the finished pasta to the tomato sauce and add the chopped cheese to it, mix. Put the prepared pasta sauce mixture in the eggplant dish and bake in the preheated oven. A few minutes before cooking, sprinkle with grated cheese on top.
