Stewed pumpkin with honey and dried fruits

To prepare this dish, you will need 0.5 kg of fresh pumpkin, 2 tbsp. honey, 300 g of dried fruits, cinnamon. Pour boiling water over dried fruits and leave for 15 minutes to swell. Then drain the water from them and cut the swollen fruits into small pieces. Peel the pumpkin and seeds, cut it into small slices and combine with dried fruit.

Any dried fruit is suitable - prunes, dried apricots, raisins. If you use a mixture, the dish tastes even better.

Transfer the mixture to a saucepan, cover with water and put on high heat. When the water boils, reduce the heat and continue to simmer the pumpkin. After 10 minutes, add the cinnamon and honey to the dish and mix well. Keep the pot on the stove for another 15 minutes, then remove and wrap it up with a warm towel. Let the pumpkin steep for 10 minutes, then serve.

Stewed pumpkin with cottage cheese

A light and at the same time nutritious dish is made from pumpkin with the addition of cottage cheese. To prepare it, you will need:

- 0.5 kg pumpkin;

- 300 g of cottage cheese;

- 2 tbsp. butter;

- a bunch of parsley;

- 1 tsp salt.

Peel and wash the pumpkin, cut it into thin strips. Then add salt and stir. Rinse parsley well and chop finely, combine it with cottage cheese.

For this dish, it is better to use fatty cottage cheese.

Put a layer of pumpkin 1, 5 cm thick in a pot for roast, put the same layer of cottage cheese on top. Thus, alternate foods by placing them in a container. Lay out so that there is a layer of pumpkin on top, on which you need to put pieces of butter.

Cover the pot with a lid and place it in an oven preheated to 180 ° C. Simmer the pumpkin for 20 minutes, then turn off the heat and let the dish simmer in the oven for another half hour.

Stewed pumpkin with rice and vegetables

You can stew pumpkin with vegetables and rice, in this form it is good as an independent dish or an addition to meat. For cooking you will need:

- 100 g of rice;

- 3 tomatoes;

- 200 g pumpkin;

- 1 carrot;

- 1 onion;

- 3 cloves of garlic;

- greens to taste;

- salt to taste.

Cut the onion into half rings, carrots into thin rings and lightly fry the vegetables in vegetable oil in a deep saucepan.

Peel the pumpkin and cut it into small cubes, transfer to a saucepan with vegetables and simmer for 15 minutes under a closed lid.

Pour boiling water over the tomatoes, peel them off and chop finely, chop the garlic. Combine the garlic and tomatoes with the rest of the vegetables, stir, salt and simmer for 10 minutes.

Rinse the rice and put it in a saucepan, stir. Pour the rice and vegetables with water so that it is one centimeter taller than them. Simmer the saucepan until all the water is absorbed into the rice. Sprinkle the cooked dish with chopped parsley or dill and serve hot.
