Rinse 0.5 kilograms of fresh veal ribs under cold water and separate from each other. Combine one teaspoon of salt and 1/2 teaspoon of ground black pepper, rub the ribs with this mixture. Let them stand like this for at least 30-40 minutes. If you have time, transfer the ribs to a saucepan, cover and refrigerate overnight.

Step 2

Preheat a frying pan and add 3-4 tablespoons of vegetable oil. Fry the ribs on both sides so that they become slightly browned. Dissolve 2 tablespoons of thick tomato paste in 100 milligrams of water. Put a medium-sized saucepan on the fire, add the water and tomato paste diluted in it and transfer the fried ribs there. Cover the pot with a lid.

Peel one carrot and one onion. Cut the onion into small cubes, grate the carrots. In the same pan where the ribs were fried, fry the onions and carrots. Wash the bell peppers and cut into small pieces. Transfer the sautéed vegetables and chopped bell peppers to the meat. Add a small amount of water and mix everything, cover the pan with a lid and simmer until tender, about 35-40 minutes. 10 minutes before cooking, squeeze 1-2 cloves of garlic into a saucepan and add 25 grams of butter. Mix everything, cover and simmer until tender.
