Tilapia differs from other fish in its tender white meat and low fat content, therefore it is ideal for dietary meals. In addition, it does not have a specific fishy smell, for which it is sometimes called "river chicken". Tilapia meat does not require prolonged heat treatment, so almost all fish recipes are suitable for its preparation. It is perfect for baking in foil and pots, fish cakes or traditional breaded and batter frying.

It is necessary

    • 500 g tilapia fillet;
    • salt;
    • pepper;
    • lemon;
    • spices to taste;
    • vegetable oil;
    • dill.
    • For batter:
    • 100-150 g flour;
    • 0.5 glasses of milk or water;
    • 2 egg yolks or 1 egg;
    • a tablespoon of melted butter;
    • salt.

Instructions

Step 1

Defrost the tilapia fillets well so that a large amount of liquid does not escape during cooking. Then quickly rinse in cold water and cut into small pieces, 1-1.5 centimeters thick and 5-6 centimeters long. Sprinkle the resulting fish "sticks" with vegetable oil, lemon juice or a weak solution of citric acid.

Prepare the batter. Pour flour into a bowl and add lukewarm liquid (milk or water). Melt the butter and pour into the batter too. Add egg or egg yolks. Salt the batter to taste and place in a cool place for thirty minutes. Beat the egg white separately and add to the batter just before frying the fish.

Step 3

Wash the dill, dry and chop finely. Sprinkle the tilapia with spices and chopped dill, which can be substituted with red pepper if desired. Then let the fish prepared for batter soak in spices for about twenty minutes.

Step 4

Salt the pieces of fish. Pour some flour into a bowl and roll each tilapia slice on both sides. This is to ensure that the batter does not run off the fish.

Step 5

Pour a large amount of vegetable oil into a deep frying pan or a special saucepan; it should be enough to cover the whole tilapia pieces when cooking. Heat oil well over high heat.

Step 6

Get out the batter. Add whipped egg white to it and mix well. Using two forks, dip the fish pieces into the batter and quickly submerge them in a skillet or pot of hot vegetable oil for frying.

Step 7

After one to two minutes, when the batter covering the fish is browned, remove the tilapia pieces from the oil with a slotted spoon and dry them on a sieve. Do not forget to place a plate under it, where the excess oil will drain.

Serve hot tilapia with fresh vegetable salads. It goes well with mashed potatoes fried in batter fish.
