It is necessary
- For the test:
- - flour - 500 g;
- - sugar - 60 g;
- - butter - 60 g;
- - egg - 1 piece;
- - milk - 250 ml;
- - fresh yeast - 21 g;
- - salt - 0.5 teaspoon.
- For the cream:
- - milk - 250 ml;
- - egg yolks - 3 pcs.
- - starch - 20 g;
- - sugar - 40 g;
- - vanilla sugar - 1 sachet.
Instructions
Step 1
Sift the flour. To do this, pass it through a sieve. Next, add fresh yeast and granulated sugar to it. Mix everything thoroughly. Add warm milk, softened butter crushed into small pieces, as well as chicken egg and salt there. Knead the dough for 20 minutes, then put it in a warm place for 60 minutes. Thus, its volume will be 2 times larger than the original one.
Step 2
In the meantime, prepare the cream for future buns. To do this, combine 2 egg yolks with starch in a separate bowl. Mash and add a small amount of milk there. This is necessary in order for the mixture to become liquid. Pour the rest of the milk into a saucepan and put on fire. When it boils, add the egg mass to it, stirring continuously. Cook until thick, that is, for 2-3 minutes. The cream is ready. To prevent crusting, cover it with cling film.
Step 3
Roll out the finished dough with a rolling pin into a layer, the size of which is approximately 30 x 40 centimeters. Put the patisier cream on it, then wrap it in such a way that you get a roll. Divide the resulting roll with a knife into equal pieces.
Step 4
Cover the round baking dish with parchment and place the dough pieces on top. Remember to leave some distance between them. Leave the future buns in this state for 30-40 minutes. After the time has passed, brush with lightly beaten egg yolk.
Step 5
Preheat the oven to 180 degrees. Send the dish into it for about 40-45 minutes. Brioche brioche with patisiere cream are ready!
