Ingredients:

  • 0.9 kg of beef meat;
  • 1 kg of sauerkraut;
  • 1 large carrot;
  • 4 small onions;
  • 200 gr salted brisket with bacon;
  • 2-4 eggs;
  • 2 tbsp. l. olive oil;
  • 50 ml Teriyaki marinade sauce;
  • 1 tbsp. l. dry sweet paprika;
  • 1 tsp hops-suneli;
  • 1 tsp saffron.

Preparation:

  1. Boil eggs until tender, cool and peel.
  2. Pass the beef meat through a meat grinder with the finest mesh.
  3. Put the minced meat in a bowl, season with spices and 30 ml Teriyaki marinade sauce. Stir with your hands until smooth, cover and send to the refrigerator for one day. If the cooking time is very short, then it is recommended to infuse the minced meat for 4 hours at room temperature.
  4. Dice the onion. Grate carrots for Korean carrots.
  5. Heat olive oil in a skillet. Put the onion in the oil and fry it lightly. Then add carrots to the onion. Mix everything and put out a little. Then add the remaining marinade sauce there, mix everything again and simmer a little.
  6. Divide the roast into two equal parts. Stir one part into the minced meat, and the second part with squeezed sauerkraut, put in a frying pan, first fry, and then cover and simmer for about 5 minutes.
  7. Move the stewed cabbage to the edge of the pan, freeing up some space. Cut the brisket into cubes, put on the free edge of the pan, fry a little and mix with the cabbage.
  8. Take a long rectangular cake pan and grease it with butter. Put 2/3 of the minced meat in a mold and flatten, forming the bottom and walls of the meat loaf.
  9. Put ½ part of the cabbage filling on the bottom of the minced meat.
  10. Place 4 whole eggs on the cabbage in the middle along the mold. If the shape is not high, then you can take 2 eggs, cut them in half lengthwise and lay out in halves.
  11. Cover the eggs with the second part of the cabbage filling, and cover the filling with minced meat, connecting the edges.
  12. You need to bake a meat loaf with sauerkraut for 1 hour in an oven preheated to 180 degrees.
  13. After an hour, remove the baked meat loaf from the mold, transfer to a plate, garnish with herbs and fresh vegetables and serve immediately. Note that this dish is good both hot and cold.
