A very good solution to use a liver is to make a pie. A large amount of liver can be deliciously served on the table.
It is necessary
- For the test:
- - wheat flour 1 kg;
- - yeast 15 g;
- - sugar 15 g;
- - milk 1 l;
- - yolk 2 pcs.;
- - chicken egg 2 pcs.;
- - vegetable fat 100 g;
- - salt.
- For filling:
- - green onions 1 bunch;
- - onions 3 pcs.;
- - veal liver (liver, heart, lung) 1 pc.;
- - chicken egg 3 pcs.;
- - 3/4 cup vegetable oil;
- - pepper;
- - salt.
Instructions
Step 1
Peel the onion, chop into small pieces and salt. Fry in hot vegetable oil so that the onion gives juice and immediately remove from heat.
Step 2
Boil the liver until tender, then pass through a meat grinder and fry with onions. Season with salt and pepper to taste. Boil eggs hard-boiled, cool in cold water, peel and cut into small slices.
Step 3
Pour half the flour into a bowl, add 1 cup of warm water and yeast to it, then stir thoroughly. Cover and leave to rise in a warm place for 45 minutes. Beat the yolks into the risen dough, add sugar, salt and milk. Then add the rest of the flour and knead the dough. Then add vegetable oil and mix again. Leave the dough for 1, 5 hours in a warm place.
Step 4
Grease a baking sheet with vegetable oil. Roll 2/3 of the dough into a layer and place on a baking sheet. Top with onion, liver, and eggs. Roll the remaining dough into a thin layer and cover the filling. Connect the edges of the dough together. Brush the cake with a beaten egg and make holes for the steam to escape. Bake for 1 hour at 200 degrees.
