Crispy pastry for pasties with whey
Heat the whey in a saucepan or small saucepan over medium heat and remove from the stove, not simmering too much. Sift the flour, pour it into a deep container and make a small indentation in the top.

Pour vegetable oil into it, add salt, then pour in hot whey in a thin stream, constantly stirring the resulting mass.

Knead the elastic dough first with a spatula and after thickening with your hands. Shape it into a ball, cover it with a towel or an inverted bowl, and let sit for half an hour.

Remove the kefir from the refrigerator and keep it at room temperature for 30-40 minutes, mix with the beaten egg using a whisk. Add baking powder and salt to the resulting slurry mixture and let it swell and rise slightly.
