Instructions

Step 1

Crispy pastry for pasties with whey

Heat the whey in a saucepan or small saucepan over medium heat and remove from the stove, not simmering too much. Sift the flour, pour it into a deep container and make a small indentation in the top.

Step 2

Pour vegetable oil into it, add salt, then pour in hot whey in a thin stream, constantly stirring the resulting mass.

Step 3

Knead the elastic dough first with a spatula and after thickening with your hands. Shape it into a ball, cover it with a towel or an inverted bowl, and let sit for half an hour.

Step 4

Delicious dough for pasties on kefir

Remove the kefir from the refrigerator and keep it at room temperature for 30-40 minutes, mix with the beaten egg using a whisk. Add baking powder and salt to the resulting slurry mixture and let it swell and rise slightly.

Step 5

Enter the sifted flour there and knead a soft dough that does not stick to your palms. Let it rest a little under a clean cloth while you prepare the filling with meat, vegetables, or cheese.

Step 6

Airy dough for pasties on beer

Rub the egg well with a pinch of salt, turning it into a foam. Pair it with beer without stopping working with a whisk or mixer. Pour flour into the liquid in small portions, again without ceasing to stir the mass, first with a spoon, then with your hands.

Step 7

Knead the dough until smooth and no longer bubbling with beer gas. It should be flexible and not tight. Roll it into a lump and wrap in plastic wrap for 20-30 minutes.

Step 8

Boil water in a saucepan or enamel bowl, dissolve vegetable oil in it and dissolve salt. Pour 2/3 of the flour into a bowl and stir very quickly with a whisk so that no lumps appear. Add eggs and remaining flour there.

Step 9

Transfer the dough to a table and knead thoroughly until firm. Place a slightly damp napkin on top and let it "rise" for 1 hour.
