Chebureki is a hearty Mongolian dish, far from lean.

We offer a proven method of simple preparation of pasties, for which a little vodka is added to the dough, from this it crunches characteristically, and the pasties are lush.

It is necessary

  • For the test:
  • - premium wheat flour - 400 g;
  • - water - 200 ml;
  • - vodka - 1 tbsp. with a slide;
  • - sugar - 1/2 tsp;
  • - salt - 1/2 tsp;
  • - vegetable oil - 3 tbsp.
  • For filling:
  • - minced meat (I have venison + pork, but it is possible to your taste) - 500 g;
  • - onions - 300 g;
  • - salt, pepper - to taste;
  • - zira - a pinch.

Instructions

Step 1

Add vodka, sugar and salt to the water, stir until the ingredients are completely dissolved. Put the flour in a bowl in a slide, make a depression in the center of the slide. Pour out the syrup, start kneading the dough. It is more convenient to use a spoon first.

Add vegetable oil and knead a homogeneous dough with your hands. It should not be cool, but also not stick to your hands. You can let the dough stand, but it can be cooked according to this recipe right away.

Chop the onion, sprinkle a little with salt and mash it well with your hands until the onion becomes a little transparent and slimy. So you can leave it for 5-10 minutes to lie down so that the onions let the juice out. Add the onion and spices to the minced meat and mix well. If there are enough onions, then the minced meat will be juicy.

Step 4

Put a cut off small piece of dough on the prepared sprinkled surface (depending on the size of the pasties you intended). We roll out no more than 3 mm layer and cut out an even circle, you can attach a plate and cut off all unnecessary with a knife.

We spread the minced meat on half of the dough (see photo).

We close the second side and pinch the edges with a fork to tightly close the minced meat inside and give a beautiful look to our vodka pasties.

Put our cheburek on the oil preheated in a frying pan and fry on both sides until a characteristic color, about 3-5 minutes on each side.
