Lavash is bread made from white flour of the peoples of the Caucasus and the Middle East. Moreover, each nationality has its own recipe for its preparation. Real pita bread should be baked in an oven flooded with wood. This gives it a unique taste and smell. Of course, you can bake it at home in the oven, but keep in mind that the bread will turn out to be different in its qualities.

It is necessary

    • kefir - 1, 5 glasses;
    • flour - 4 cups;
    • salt - 1.5 teaspoon;
    • yolk - 2 pieces;
    • soda - 1 teaspoon;
    • sugar - 1 tablespoon;
    • refined oil - 1 tablespoon;

Instructions

Step 1

Add salt, soda (slaked with vinegar or lemon juice), refined butter and sugar to warm kefir. Mix everything thoroughly (you can knock down with a whisk) until a homogeneous consistency.

Step 2

Sift premium flour 3 times through a sieve. This will make it softer, friable, airy, enrich it with oxygen, which will improve the quality of lavash.

Step 3

Knead the dough, gradually pouring the liquid base into the flour. You can never guess exactly how much flour is needed for such a lavash. Its amount depends on the consistency of kefir and on its fat content. Therefore, the indicated dose (4 glasses) is approximate. The dough should be moderately soft and sticky. Transfer it to a cup, cover and place in a warm place to lift.

Step 4

As soon as the dough has slightly increased in volume, knead it again in flour. Then divide into small balls, cover with a clean towel and leave for another 30 minutes.

Step 5

Crack two eggs, separate the yolks from the whites. The yolks are used to lubricate the surface of the pita bread, just beat them first.

Step 6

Now proceed directly to baking. Form each bun into a round pita bread (2 centimeters thick) by kneading the dough in a dry skillet with your fingers. Then brush with egg yolk, prick with a fork in several places and put in the oven for 15 minutes at 180-200 degrees. The bread is baked in the oven for 7-10 minutes.

Step 7

Cover the finished pita bread with a clean napkin until warm and soft. They can be used with meals instead of regular bread or for making sandwiches.
