There are many ways to make lecho from carrots and peppers. Surely, each housewife has her own signature recipe for making lecho. But the most delicious is obtained with juice, which is prepared from ripe tomatoes. An easy way to make juice is to put chopped tomatoes in a saucepan, let them simmer, and rub through a sieve. After that, boil the juice for 15 minutes.
Step 2
While cooking lecho juice with carrots and peppers, peel and chop the garlic. The easiest and fastest way to grind the garlic is in a blender. Then put it in the juice and boil it a little, add salt, vegetable oil, sugar and cook for another 15 minutes. To prepare lecho, you will need bell peppers and carrots.
Step 3
Delicious lecho will be made from peppers of different colors. Clean it, be sure to remove the inner baffles, and cut into small pieces or strips.
Step 4
Peel and chop the carrots in any shape. Carrot slices should be small. But in any case, cut the carrots the way you like. Put the carrots in boiling tomato juice. Cook for another 5 minutes. Add pepper and boil for another 15 minutes, pour in the vinegar and close in small jars.
