The birthplace of a pie called "Chabela" is Mexico. In this country, this pastry is very popular and is prepared quite often. Try this wonderful delicacy too.
It is necessary
- For the test:
- - flour - 300 g;
- - eggs - 17 pcs.;
- - sugar - 200 g;
- - vanillin - 1 sachet;
- - lemon - 1 pc.
- For filling:
- - apricots - 2 pcs.;
- - sugar - 180 g.
- For glaze:
- - lemon - 1 pc.;
- - sugar - 800 g;
- - milk - 1 tablespoon;
- - water.
Instructions
Step 1
Pour half of the granulated sugar into a separate deep bowl. Then add 5 egg yolks and 4 whole chicken eggs to it. Beat the resulting mixture thoroughly, then give it time to thicken. Once this happens, add 2 more eggs and some sugar to it. Whisk again. Repeat this procedure until the ingredients run out.
Step 2
Then add flour sifted together with vanilla to the resulting sugar-egg mass. Chop the lemon, passing it through a meat grinder, and then add to the rest of the mixture. Mix everything properly. The Chabela cake dough is ready.
Step 3
Pour the dough into a round baking dish, send it to the oven, the temperature of which is 180 degrees, and bake it until fully cooked, that is, for half an hour.
Step 4
With apricots, do the following: rinse well, then place in a saucepan with a little water. Place the fruit on the stove and cook until the water boils. After this procedure, let the apricots cool, then rub them through a sieve.
Step 5
Transfer the apricot mass to a small saucepan and cook it over low heat until it resembles jam in its consistency.
Step 6
After cooling the finished baked goods, cut lengthwise into 3 equal cakes. On two of them, apply an even layer of apricot mass.
Step 7
Pour the granulated sugar into a saucepan and add a little water. After bringing the resulting syrup to a boil, strain it, then put it back on the fire, adding the lemon chopped with a meat grinder.
Step 8
The resulting sugar-lemon mass, after cooling, mix with milk. After beating the mixture, place it on the stove to boil. The icing for the Chabela cake is ready.
Step 9
Pour the cooled icing over the top of the baked goods. Chabela pie is ready!
