Quite often, baked chicken is served on the festive table. But chicken stuffed with pancakes is a less common phenomenon, but at the same time it is an incredibly tasty and beautiful dish.
It is necessary
-
- For pancakes:
- 0.5 liters of water;
- 7-8 tbsp flour;
- a pinch of salt.
- For filling:
- 1 chicken 1, 8-2 kg;
- 2 onions;
- 150 g of cheese;
- 100 g of mushrooms.
Instructions
Step 1
Prepare the chicken. First, wash it thoroughly and dry it lightly. Lay the carcass on its back, breast side facing you, and carefully remove the skin, taking care not to damage it anywhere. To do this, cut the skin along the breast and, prying with a knife, remove the whole thing, leaving the wings and legs.
Step 2
Combine all the water, flour and salt to make a pancake dough. Put it in the refrigerator for 1 hour. This will dissolve any lumps that have formed and the dough will become elastic.
Step 3
Make your first pancake filling. Carefully cut off all the meat from the chicken, cut it into small equal pieces and boil in salted water for 6-8 minutes. Let the meat drain and cool. Pass it through a meat grinder. Chop 1 onion and fry in hot oil in a skillet. Add the minced chicken meat, mix everything well and fry for at least 5 minutes. Add finely grated cheese to the chicken. Season with salt and pepper to taste.
Step 4
Prepare the second filling. Chop the onion finely. Chop mushrooms (champignons or any others) into cubes with a side of 1 cm, fry everything in hot vegetable oil for 5-6 minutes. Season with salt and pepper.
Step 5
Bake thin pancakes and wrap the filling in them.
Step 6
Place the prepared pancakes in the chicken skin, alternating layers: first a layer of pancakes stuffed with chicken meat, then with fried mushrooms, etc.
Step 7
Secure the skin with toothpicks or sew up with heavy thread, giving the appearance of a whole chicken carcass.
Step 8
Place the prepared chicken on a greased baking sheet. Sprinkle with salt and spices. Place in an oven preheated to 180 degrees for 40 minutes.
Step 9
Carefully place the finished dish on a large flat plate, remove the threads and toothpicks and serve. Bon Appetit.
