It is necessary
- - vegetable oil for frying;
- - 1 finely chopped red onion;
- - 2-3 tbsp. l. Thai curry paste;
- - 300 ml of coconut milk;
- - 100 ml of chicken broth;
- - 500 g of fried chicken breasts, diced;
- - 200 g of mini-cobs of corn and pea pods;
- - rice for a side dish;
- - whole chili and cilantro for serving.
Instructions
Step 1
Heat some oil in a non-stick skillet. Add the onion and cook for 1 minute.
Step 2
Add curry and cook for another 1 minute, stirring occasionally.
Step 3
Pour in coconut milk and broth and bring to a boil.
Step 4
Add chicken and vegetables, reduce heat, simmer for 10-13 minutes (until the last is cooked).
Step 5
Serve with rice, garnished with chili and cilantro leaves.
