Pollock is a fish of the cod family, one of the main commercial fish in our country. In stores, you can buy this fish in the form of fillets, backs (without head and tail) or uncut. In the latter case, pollock will need to be properly peeled before cooking.

It is necessary

    • Sharp knife or special knife for cleaning fish
    • cutting board.

Instructions

Step 1

Do not forget that the taste of the future fish dish is half dependent on the rules for pre-processing the products.

If you bought frozen fish, you need to defrost it first. This can be done using the microwave, turning on the defrosting mode for a few minutes. Or wait for the pollock to defrost naturally. You can defrost fish under running water in the sink.

Step 2

Then take a large cutting board, knife, or a special scale scraper. Place the pollock on the board with its tail to the right if you are right-handed. Now you need to clean the scales. Tilt a knife or scraper a little and begin to remove it, as if "against the grain". Scale the fish from both sides.

Then you need to cut off her head. This must be done one centimeter from the end of the gills. Then take the pollock firmly in your hand with the belly up and make an incision. It should be sufficient so that you can remove all the insides with a knife. Remove everything from the inside of the pollock, including the black foil.

Step 3

Now all that remains is to wash the fish. Some of the black film may remain inside, and the cooked dish will taste bitter, so thoroughly rinse the remnants of the film in the abdomen and dry the fish.

After all these manipulations, the pollock is ready for cooking. Now you can safely cook all your favorite dishes from it.

Step 4

Of course, the smell of fish is not very pleasant, especially from pollock, but you can get rid of it with several effective methods:

- to remove the fishy smell from your hands, wash them in salted water and sprinkle your hands with citric acid;

- soak dishes, cutting board, knives in cold salted water for a few minutes, and then rinse with warm water;

- to reduce the smell of fish during cooking, add a few drops of lemon juice or a little milk to the boiling dish;

- fry a couple of tablespoons of ground coffee in a pan to get rid of the fishy smell in the kitchen.
