Shrimp, crabs, squid, mussels, oysters, octopuses - the list of seafood is very extensive. Seafood delicacies are popular not only among restaurant patrons, but also among hostesses who happily prepare holiday and everyday seafood dishes for family and guests.
Spaghetti with seafood sauce
You will need:
- spaghetti - 1 pack;
- fillet of cod (or other sea fish) - 1 pc;
- peeled shrimps - 100 g;
- squids - 100 g;
- tomato - 3 pcs;
- garlic - 2 cloves;
- olive oil - 2 tablespoons;
- basil - 1 bunch;
- sea salt, pepper - to taste.
Scald the tomatoes with boiling water, peel them off and cut into cubes. Chop the garlic finely. In a deep skillet with a thick bottom, heat the olive oil and lightly fry the garlic, then add the tomatoes and simmer for a few minutes. Remove the skin from the squid and cut into rings. Cut shrimp and fish into small pieces. Finely chop half a bunch of basil. Add seafood and basil to the skillet, season with salt and pepper and simmer for 3-4 minutes.
Boil the spaghetti in salted water until half cooked (about 6-7 minutes), place in a pan with sauce and add a little water in which they were cooked. Bring the pasta to a cooked state, stirring constantly and adding more water as needed. Serve hot spaghetti, sprinkle with remaining basil on top.
Squid salad with vegetables
You will need:
- fresh squids - 300 g;
- bell pepper - 1 pc;
- medium-sized cucumber - 1 pc;
- a small head of Chinese cabbage - 1 pc;
- soy sauce - 2 tablespoons;
- sour cream - 2 tablespoons;
- small tangerine - 1 pc.
Rinse the squid in cool running water and peel it, place it in salted boiling water and cook for 1-2 minutes. Then take out, pour over with cold water and cut into thin rings. Chop the Chinese cabbage and finely chop the peeled bell pepper. Cut the cucumber into long thin strips or grate for Korean carrots. Combine vegetables with squid in a deep salad bowl.
Prepare the dressing in a separate container. Squeeze the juice out of the tangerine. Combine soy sauce, sour cream, tangerine juice and beat until smooth. Serve salad and sauce separately, or season salad just before serving.
A Few Tips
If using frozen seafood, defrost it on the bottom shelf of the refrigerator.
Thaw the frozen squid fillets in lightly salted cold water. To make it easier to remove the skin from the squid, pour boiling water over them. Cook the squid for no more than 5-7 minutes so that the meat retains its softness and delicate taste.
In order to cook almost any seafood, put them in salted boiling water, cover and cook for 5-7 minutes over low heat, octopuses and cuttlefish are boiled for 25-30 minutes.
