It is necessary
- - eggplant - 1 pc;
- - zucchini - 1 pc.
- - leeks - 470 g;
- - Mozzarella cheese - 350 g;
- - puff pastry - 600 g;
- - butter - 80 g;
- - salt;
- - ground black pepper;
- - chicken egg - 1 pc;
- - cilantro and parsley - 1 bunch;
- - dried ground oregano - 1 teaspoon.
Instructions
Step 1
Chop the white part of the leek into thin slices. After melting the butter in a frying pan, save it, that is, fry until it becomes soft, while stirring constantly. Do the same with eggplant and zucchini: cut into cubes and fry. Remove the peel from the second if it is hard. Stir all vegetables together.
Step 2
Finely chop the parsley and cilantro, then add to the main vegetable mass. Stir well. Season with salt and pepper.
Step 3
Turn the cheese into small cubes and send it to the vegetables. Stir the resulting filling and let it cool slightly.
Step 4
After placing a small amount of flour, about 2 tablespoons, on the work surface, roll out the puff pastry on it. Turn it into a thin layer no more than 2 millimeters thick. Then, using a knife, divide into wide strips 5 centimeters wide and about 20 centimeters long.
Step 5
Lubricate the form well, then put the dough strips on it one by one so that each one lies on the edge of the previous one, in other words, overlap. Do not forget that the strips laid out in this way should cover not only the sides of the form, but also its bottom.
Step 6
Place the vegetable filling on the dough and cover it with the free edges of the strips. Brush the future pie with beaten egg and sprinkle with oregano.
Step 7
Bake the dish in the oven at 190 degrees until golden brown, that is, for about 30-40 minutes. The Generous Farmer Vegetable Pie is ready!
