In Russian cuisine, there are many recipes with honey agarics. They are pickled, salted, stewed, fried and boiled. These mushrooms are rich in copper, zinc, iron, phosphorus, calcium, and vitamins C and B1. Honey mushrooms are low-calorie mushrooms, but at the same time they are a real source of protein. Regular inclusion of these mushrooms in the diet normalizes the thyroid gland and increases hemoglobin.

- For cheese soup with honey agarics:
- - 200 g of fresh mushrooms;
- - 200 g of processed cheese;
- - 3-4 pcs. potatoes;
- - 1 carrot;
- - 1 onion;
- - vegetable oil;
- - salt;
- - pepper.
- For buckwheat porridge with honey agarics:
- - 1 glass of buckwheat;
- - 300 g of frozen mushrooms;
- - 1 head of onion;
- - 2 ½ glasses of water;
- - 2 tbsp. l. vegetable oil;
- - 2 tsp tomato paste;
- - greens of dill and parsley;
- - ground black pepper;
- - salt.
- For pilaf with mushrooms:
- - 10-15 dry mushrooms;
- - 1 glass of rice;
- - 3 tbsp. l. vegetable oil;
- - 1 ½ cups of broth;
- - 3 onion heads;
- - 1 carrot;
- - 1-2 tbsp. l. tomato paste;
- - salt.
Instructions
Step 1
Cheese soup with honey agarics
Sort out fresh mushrooms, clear of earth and debris. Rinse the mushrooms thoroughly under running water. Then transfer to a saucepan, cover with cold water and put on fire. When only the water boils, discard the mushrooms in a colander, drain the water, and rinse the mushrooms. After that, fill the mushrooms with clean water again and cook over moderate heat for 40 minutes. Peel and wash carrots, onions and potatoes. Grate the carrots on a coarse grater, finely chop the onion, and cut the potatoes into small cubes. Fry onions and carrots together with boiled mushrooms in vegetable oil. Season with salt and pepper.
Step 2
Boil 2 liters of water in a separate saucepan, lower the diced potatoes, season with salt and cook for 10-15 minutes. Grate the melted cheese, add to the pot with potatoes and cook until the cheese is completely melted. Then add the fried vegetables and honey mushrooms, season with salt and pepper if necessary. Bring to a boil and remove from heat.
Step 3
Buckwheat porridge with honey agarics
Sort the buckwheat, rinse, pour 2 cups of hot boiled water and cook the crumbly porridge. Defrost honey mushrooms and rinse under running water. If necessary, cut large mushrooms into slices, peel the onions and chop them into thin rings. Transfer honey mushrooms with onions to a saucepan, cover with water, bringing to a boil, cook over low heat for 15-20 minutes. At the very end, add tomato paste, boil and remove from heat.
Step 4
Put loose buckwheat porridge in portioned pots, put mushrooms and onions on top and level the surface. Place the pots in the oven and bake for 10-15 minutes at 180 ° C. Before serving, garnish the buckwheat porridge with mushrooms with finely chopped herbs.
Step 5
Pilaf with honey agarics
Sort out dry mushrooms, rinse, soak for 3 hours in cold water. Then boil in the same water until tender. Remove the mushrooms from the broth with a slotted spoon, cut into pieces and fry in vegetable oil. Peel the onions and carrots, chop finely and save in a separate skillet. Add tomato paste to the vegetables, stir and fry everything together for a couple of minutes.
Step 6
Transfer the onions and carrots sautéed with tomato to the mushrooms, add the pre-sorted and washed rice. Pour in one and a half cups of strained mushroom broth and season with salt. Then cover the dishes with a lid and simmer until the rice is cooked.
