  • - flour - 200 g
  • - salt - 1 tsp
  • - sugar - 1 tsp.

Step 1

Combine kefir with cold water and add soda. Mix thoroughly to foam. Instead of a mixture of kefir and water, you can use milk whey, which remains after making homemade cottage cheese. Also, whey can be purchased in the store, in the dairy section. If for the preparation of one portion of hotcakes we take 100 ml of kefir and 150 ml of water, then we need 250 ml of whey. In this case, you do not need to add water.

Step 2

Now add salt and sugar to the foamed mixture, mix again.

Next, you need to introduce flour. We use wheat flour with an average gluten content (protein - 10.3 g per 100 g of product). Stir the mixture with a spoon or a whisk, gradually adding flour to avoid the formation of lumps.

Step 3

For frying hot cakes, it is better to choose a cast iron skillet or a non-stick skillet.

We heat the pan, put about three tablespoons of dough in the center, level it out, getting an even circle. Cook over medium heat. When the top side of the pancake is dry, turn it over, hold it in the pan for a few seconds and transfer it to a dish.

Serve hotcakes with fruits, berries, whipped cream, honey or syrup.
