It is necessary

  • • 300 g of beef on the bone;
  • • 1 head of onion;
  • • 3 pickled or pickled cucumbers;
  • • 1 can of canned olives;
  • • 200 ml of cucumber pickle;
  • • 200 grams of cabbage (white cabbage);
  • • 6 cloves of garlic;
  • • 3 liters of filtered water;
  • • 1 parsley root;
  • • 100 g of tomato paste;
  • • 6 bay leaves;
  • • 6-8 peas of allspice;
  • • 1 chili pepper;
  • • ½ teaspoon of ground black pepper;
  • • 3 hunting sausages;
  • • 1 smoked chicken thigh;
  • • 2-3 smoked pork ribs;
  • • 200 g of boiled-smoked neck;
  • • 1 lemon;
  • • fresh herbs (for serving).

Instructions

Step 1

Rinse a piece of meat well under running water, it will wash off small fragments of bone and random debris on the pulp.

Step 2

Put beef on the bone in a large saucepan, pour cold filtered water, put on high heat, wait for the liquid to boil. Then add lavrushka leaves, allspice-peas, peeled whole parsley root and unpeeled (in husk) whole onion, which should be thoroughly washed before that.

Step 3

Reduce heat to low and simmer for about 2-3 hours. Remove the foam formed from the meat.

Step 4

After cooking time, remove the piece of meat, and strain the broth through cheesecloth or a very fine sieve. Throw out all that remains on the sieve, wash the pan and refill the already strained broth there.

Step 5

Add smoked ribs, already chopped, into broth and simmer over low heat. Cut the neck into small cubes (about 5 by 5 mm), cut the meat from the chicken thigh, cut the sausages into rings or half rings. Throw these smoked meats in broth too.

Step 6

Cut cucumbers into small cubes, olives into rings, chop cabbage (thinly). Cut 3 cloves of garlic into slices, and turn the other three into gruel using a garlic press.

Step 7

Remove boiled and slightly cooled meat from the bone and chop finely.

Step 8

Heat the oil in a frying pan, send the garlic there in slices first, fry until a pleasant golden brown color. Then add chopped cabbage, fry a little. Pour one ladle of broth and the indicated amount of cucumber pickle.

Step 9

Top with cucumbers, chili peppers (optionally chopped) and olives. Simmer the contents of the pan, covered, for about 5-7 minutes. Then add tomato paste, ground black pepper and crushed garlic. Mix all the ingredients and simmer until the cabbage is cooked.

Step 10

Send the prepared dressing to the broth, put the boiled meat there. Cook for 5 minutes. After turning off the heat, insist the hodgepodge for about 10-20 minutes. Serve hot, add chopped herbs and lemon rings to a plate.
