A casserole made from assorted vegetables, boiled rice and minced meat is a very tasty and beautiful dish, which is seasoned with spices and decorated with tomatoes and herbs. This casserole can be the main dish both on an everyday table and on a festive one.
Ingredients:
- 1 tbsp. rice;
- 0.3 kg minced meat;
- 0.4 kg frozen mixed vegetables;
- 1 onion;
- 1 egg;
- 2 small tomatoes;
- 4 tbsp. l. sunflower oil;
- 1 tbsp. l. olive oil;
- 1 tbsp. l. butter;
- 1 tbsp. l. bread crumbs or hard cheese;
- 1 tsp universal spices for meat;
- 1 tsp universal seasoning for vegetables;
- 2-3 st. l. water;
- 1 tsp turmeric;
- black pepper and salt.
Preparation:
- Rinse the rice and boil until tender, following the directions on the package. In this case, the water for rice does not need to be salted.
- Heat 2 tbsp in a skillet. l. odorless sunflower oil.
- For a vegetable mix with rice and meat, you need to purchase a frozen vegetable platter of potatoes, carrots, onions, green peas and green beans. So, put the assorted vegetables in hot oil, season with vegetable seasoning and salt, fry for 5-7 minutes until tender, stirring without fail.
- In a cup, mix water and turmeric.
- Pour boiled rice and salt over fried vegetables, pour in a mixture of turmeric and water. Mix everything thoroughly and simmer for 1-2 minutes over low heat.
- Cut the onion into large half rings and fry in sunflower oil until transparent.
- Put the minced meat in a bowl, knead well with a fork and pour into a frying pan to the onion. Add 1 tbsp. l. butter and spices for meat. Mix everything and fry until the minced meat is ready.
- Put the cooled minced meat with onions into a blender bowl. Drive in an egg there, mix and chop everything. Moreover, this procedure will not only grind the ingredients, but also make the minced meat very tender.
- Take two small baking dishes. Put rice mixture and minced meat in layers in each mold, alternating them one after another. The bottom layer should be made from rice and vegetables, and the top layer must be made from minced meat.
- Cover the top layer of the dish with either breadcrumbs or grated hard cheese.
- Cut the tomatoes into half slices, put on top of a layer of cheese (crackers) and drizzle with olive oil.
- Bake the vegetable mixture with rice and meat for 20 minutes at a temperature of 190 degrees.
- Then remove from the oven, sprinkle with chopped herbs and serve.
