This seasonal dish turns out to be not only tasty, but also has an original appearance, because it is served in a pumpkin. Such a stew can also be prepared for a small child - it is good for digestion, it contains a lot of vitamins and nutrients.
It is necessary
- - 500 g chicken fillet;
- - 2 potatoes;
- - zucchini;
- - 150 g of pumpkin pulp;
- - 1 bell pepper;
- - onion;
- - carrot;
- - 1 tomato;
- - fresh herbs;
- - salt to taste;
- - olive oil for frying;
- - 4 mini pumpkins.
Instructions
Step 1
Cut off the top of the mini pumpkin and clean out the center with seeds. Place them in a double boiler and cook for 15 minutes.
Step 2
Cut the chicken fillet into large cubes and fry in olive oil. Add diced potatoes, pumpkin, bell peppers, carrots, and courgette.
Step 3
Stir, simmer for a couple of minutes and add chopped onion. Cook over low heat for about 15 minutes. Season with salt, put in the peeled and finely chopped tomato and simmer for a couple of minutes.
Step 4
Sprinkle the finished stew with herbs, stir, place in mini pumpkins and cover with the cut tops. Place them in an oven preheated to 200 ° C and bake for 15 minutes. Serve directly in the pumpkins.
