On summer evenings, you always want cold dishes. Apricot soup can be a good variety for your dinner. It is very satisfying and refreshing.
It is necessary
- - blender;
- - apricots 500 g;
- - lemon juice 1 teaspoon;
- - sugar 100 g;
- - apricot or apple juice 200 ml;
- - cream 33% 100 ml;
- - roasted almonds 50 g;
- - salt on the tip of a knife;
- For dumplings:
- - semolina 2 teaspoons;
- - milk 1/4 cup;
- For decoration:
- - whipped cream 100 ml;
- - powdered sugar 2 teaspoons.
Instructions
Step 1
Cooking dumplings. Boil semolina in milk and pour onto a dish moistened with water. When the mass has hardened, cut it into small cubes or shapes.
Step 2
Wash the apricots, halve them and remove the seeds. Leave a few pieces for decoration, pour the remaining halves with 350 ml of water, add lemon juice and bring to a boil. Then cook the apricots for about 5 minutes over medium heat. Then add sugar and salt and bring to a boil again.
Step 3
Let the apricots cool slightly and chop them with a blender. Add apple or apricot juice to the apricot mass and beat until smooth.
Step 4
Scald the almonds with boiling water, peel and chop. Whip the whipped cream with the icing sugar.
Step 5
Pour the apricot soup into bowls, pour some whipped cream on top and use a toothpick to make patterns. Place semolina dumplings in each plate. Sprinkle the soup with almonds.
