Beloved by many, the meatball soup is quite easy to make. The housewives have their own secrets of making minced meat for meatballs - for example, you can add a little semolina to it to make the meat balls more tender.
For the meatball soup, you will need vegetables - potatoes, carrots, and onions. For meatballs - 400 g minced meat and 2-3 tablespoons of semolina. You can add a little noodles to the soup. You will also need butter, parsley root, bay leaf, black ground pepper, a couple of garlic cloves, and salt.
Peel the parsley root and carrots, cut into small pieces or grate on a coarse grater.
Put the minced meat in a cup, peel a small onion and grate directly into the minced meat on a fine grater. Add salt, pepper, mix everything. Pour semolina there, mix again. Form the meatballs with your hands, arrange them on a cutting board.
Pour 2 liters of water into a saucepan and put it on fire. When the water boils in it, you need to salt it and lower it sequentially:
- meatballs, slices of carrots and parsley, boil for 15 minutes;
- chopped potatoes, bay leaves, garlic, cook until the potatoes are tender;
- a handful of noodles, bring the soup to a boil and remove from heat.
Now put butter and herbs in the soup, cover the pan with a lid and set to infuse for 10-15 minutes.
When the soup is infused, pour it into portioned bowls. It is good to serve fresh bread, lightly greased with mustard.
