The classic recipe for making vegetable soup with meatballs. Soup is indispensable for lunch. It is very satisfying and gives strength and vigor until the end of the working day!
It is necessary
- - a large saucepan;
- - onion 1 pc.;
- - celery 1 stalk;
- - carrots 2 pcs.;
- - white cabbage 600 g;
- - butter 50 g;
- - dried bell pepper 1 teaspoon;
- - salt;
- - ground black pepper;
- - greens;
- - hot boiled water 3 liters.
- For the meatballs:
- - minced beef 500 g;
- - onion 1 pc.;
- - boiled rice 5 tbsp. spoons;
- - fresh parsley 2 tbsp. spoons;
- - chicken egg 1 pc.;
- - salt;
- - ground black pepper.
Instructions
Step 1
Chop the cabbage finely. Peel the carrots and cut into slices. Celery - in slices, and onions - in half rings. Melt the butter in a large saucepan for the soup. Sauté the onions until soft, then add the celery and carrots to it, sauté for another 7 minutes.
Step 2
Put chopped cabbage in a saucepan, pour hot boiled water, bring to a boil, salt and pepper, add dried bell pepper. Cook for 10-15 minutes until the cabbage is done.
Step 3
Put the ground beef, boiled rice, onions, pre-cut into small cubes, parsley and an egg in a cup. Stir the minced meat until smooth. Season with salt and pepper to taste and mix well again. Stick into walnut-sized meatballs.
Step 4
Place the meatballs in a saucepan with cabbage and vegetables. Once the meatballs float up, cook the soup for 5-7 minutes until the meatballs are done. Let the soup sit for 10 minutes and serve with fresh herbs.
