Okroshka is one of the popular cold soups that fits perfectly into the menu on hot summer days. There are many recipes for this dish. One of them is a refreshing and tasty okroshka with kefir.
It is necessary
2 potatoes; - 2 fresh cucumbers; - 400 g of ham; - 2 eggs; - 5 radishes; - a liter of kefir; - salt to taste; - water; - a bunch of green onions, dill and parsley
Instructions
Step 1
Prepare ice in advance. It will be required for okroshka to be really cold. To do this, rinse the dill under running water. Disassemble it into small tassels or chop it with a knife. Arrange the herbs in special ice cube trays and gently cover the dill with water. Place the molds themselves in the freezer.
Step 2
Wash the potatoes, do not peel them, but boil them directly in their skins until tender. Let it cool slightly and peel it off.
Step 3
Rinse the radishes and cucumbers. If you are using overripe cucumbers, peel them first. Cut vegetables into small pieces, and chop the ham and boiled potatoes. You can use boiled chicken breast instead of ham. It will be even tastier and healthier. Place all ingredients in a bowl.
Step 4
Hard boil the eggs and cut them into small pieces. Chop the parsley and green onions. Send the herbs and eggs to the bowl with the rest of the ingredients. Add salt to taste and mix everything. Wonderful dietary okroshka is ready!
Step 5
Arrange okroshka on plates, pour in kefir, stir and enjoy the unique taste! To make okroshka on kefir even colder, do not forget to add ice cubes prepared in advance to it. You can use kefir with absolutely any fat content. Dieters can dilute it with water.
