Okroshka is called a cold soup, which is prepared on the basis of kvass or kefir with the addition of chopped ingredients. The name of this dish comes from the word "crumb". Okroshka refreshes well and gives energy. In hot weather, it is perfect for snacks, as well as breakfast, lunch and dinner.

- For apple okroshka on kefir:
- 2 sour apples;
- 3 cucumbers;
- 10 pieces. radishes (or 1 radish);
- a bunch of greens (onions and dill);
- 2 eggs;
- 1, 5 l of kefir;
- mustard;
- salt.
- For apple okroshka with beet leaves:
- 3 bunches of young beets with leaves;
- 3 cucumbers;
- 2 apples;
- 2 boiled eggs;
- 2 tbsp. l. chopped greens;
- 1 tbsp lemon juice;
- 1/2 cup sour cream;
- 1 liter of kefir;
- salt.
Instructions
Step 1
Apple okroshka
Wash fresh cucumbers and radishes, pat dry and cut into small cubes. Wash the potatoes thoroughly and boil them in their skins. Then cool, peel and grate on a coarse grater.
Step 2
Chop the green onion, add a little salt and mash the onion with a spoon. It should soften and give juice.
Step 3
Boil hard boiled eggs, cool and peel. Separate the whites from the yolks, chop the whites into small pieces, and grind the yolks with mustard.
Step 4
Peel the apples and, after removing the core, chop finely.
Step 5
Mix the chopped green onions with potatoes and yolks, add the rest of the ingredients (whites, cucumbers, radishes and apples) and mix everything thoroughly.
Step 6
Pour the resulting mass with kefir, mix again, salt and cool if necessary. Sprinkle okroshka with chopped dill before serving.
Step 7
Cucumbers and radishes (or radishes) can be substituted with other raw or boiled vegetables if desired. For example, beets and carrots.
Step 8
Apple okroshka with beet leaves
Separate the young beet leaves from the stalks. Wash thoroughly and grate the root vegetables on a coarse grater.
Step 9
Cut the petioles into cubes. Put everything in a saucepan, add lemon juice, cover with hot boiled water and heat for 2-3 minutes with low heat. Remove from the stove, let the broth brew for 10 minutes and cool.
Step 10
Cut beet leaves and fresh cucumbers into strips. Wash the apples, free them from the core and chop them. Hard boil the eggs, cool, peel and chop finely.
Step 11
Add all the ingredients to the beet broth and pour in kefir diluted with cold boiled water (0.5 l). Season with salt to taste.
Step 12
Serve okroshka with sour cream, sprinkle with chopped herbs (dill and onions).
