As summer approaches, more and more often you want to taste something cool and refreshing. Therefore, now is the best time to cook okroshka on kefir. Okroshka is called a cold homemade soup that will quench not only hunger, but also thirst.
It is necessary
- - potatoes - 9 pcs.;
- - chicken eggs - 9 pcs.;
- - fresh cucumbers - 5 pcs.;
- - boiled sausage - 400 g;
- - fresh dill - 1 bunch;
- - kefir with a fat content of up to 2.5% - 2 liters;
- - water (you can take carbonated) - 0.5 - 1 liter (to taste);
- - ground black pepper - 1 tsp;
- - salt to taste.
Instructions
Step 1
Rinse the peeled potatoes under running water and put them in a saucepan. Pour in enough water to cover the entire contents of the saucepan. Bring to a boil, then reduce the temperature to a low setting and cook until tender for 20-25 minutes.
Step 2
In the meantime, you need to hard-boil the eggs. To prevent them from cracking during cooking, first remove them from the refrigerator and keep them at room temperature. Put them in a saucepan or ladle, add water, salting it, and cook after boiling for 10 minutes. Then cool the eggs in cold water, so that later they can be easily cleaned.
Step 3
When the potatoes are ready, wait until they have cooled completely, then peel them off, chop them into small cubes and transfer them to a large saucepan. Peel the eggs, cut them into small pieces and add to the potatoes.
Step 4
Also chop the cucumbers and sausage into cubes and transfer to a saucepan. After that, pour in kefir and cool water (plain or carbonated). If you like okroshka thicker, then 0.5-0.7 ml of water will be enough. And if thinner, then the amount of water can be increased to 1 liter.
Step 5
Now add chopped dill, black pepper and salt and mix everything together thoroughly. Okroshka is ready! It can be served immediately with black bread, or you can put it in the refrigerator so that it cools as much as possible and becomes even more refreshing.
