Okroshka is a cold Russian dish, especially popular in the hot season. The main ingredients of the soup are vegetables and meat products. Most often, okroshka is prepared with kvass, but you can try to make this dish on kefir.

It is necessary

    • 300 g of boiled sausage or ham;
    • 5 eggs;
    • 4 potatoes;
    • 200 g radish;
    • 4 cucumbers;
    • green onions
    • dill;
    • kefir;
    • salt.

Instructions

Step 1

Take a saucepan or any deep container. Prepare ice in tins. To do this, rinse the dill and divide into small brushes. Put one branch in the molds and pour water into them. Place the containers in the freezer.

Step 2

Rinse the potatoes thoroughly, then boil them in their skins until cooked. Open the lid of the saucepan and cool the vegetables. Next, peel them off. Cut the boiled potatoes into small cubes and add to the container. Rinse fresh cucumbers well, dry. Then peel them off. If you take small cucumbers with a thin peel, then you do not need to peel them. Cut the vegetables first into long strips and then into small cubes. Add to saucepan.

Step 3

Hard boil the eggs. Then cool them under cold running water. Dry and peel. Cut the sausage or ham into cubes. Rinse the radishes thoroughly, cut off the ends on both sides. Then dry with paper towels and chop into strips or grate.

Step 4

Rinse green onions and dill, dry and chop finely. Put all prepared ingredients in a saucepan. Then add chopped herbs and salt. Mix everything well. Pour cold kefir into okroshka. Stir and pour the prepared soup into bowls. If its consistency is very thick, then you can add a little boiled water.

Step 5

Remove the ice from the molds, add 2-3 pieces for each serving of okroshka. Cover the remaining soup in the saucepan and refrigerate.
