This is a very tasty cake - sweet juicy dough with coconut is perfectly set off by apples and cherries, they also add a slight sourness to the delicacy. It is better to serve such a cupcake warm.

Cut the apples into slices, put in a bowl to the cherry, pour in the cognac, leave for half an hour.

Melt butter in a saucepan, put apples and cherries, sprinkle with sugar a little, boil.

Put the fruit and berry mass on a sieve, drain the juice. It can be used as an impregnation for finished cake.

Beat the sugar with a little butter, add the eggs one at a time, beating thoroughly after each. Add sour cream and lemon juice to taste, stir.

Add flour with 1 teaspoon of baking powder, add coconut flakes, mix the resulting dough.

Grease a rectangular cake pan with butter, sprinkle with flour or semolina, and shake off any excess. Pour in the dough, spread the cherry and apples on top.

Bake the apple and cherry coconut muffin at 180 degrees for 45-50 minutes. Then cut into portions, serve warm.
