Lamb is best for the filling, but you can use a mixture of beef and pork. Onions should be at least as much as meat, or better - twice as much. Finely chop the meat and onions.

Put the chopped meat and onions in a bowl and season with salt. Add spices: ground black pepper, coriander, cumin. Before pouring into the meat, it is better to crush the coriander and cumin - this is done on a cutting board with a knife. Mix everything. Now you can start sculpting samsa.

Cut pieces from the dough about the size of a matchbox. Roll each piece to a round cake. Sprinkle the dough, table and rolling pin with flour so that the dough does not stick everywhere. Spread about a tablespoon of minced meat on such cakes.

Now we take the dough by the edges on two sides opposite to each other, and lift the edges up. They need to be folded and pinched. Do the same with the other two edges.
