An uncomplicated recipe will delight sweet lovers! Unusual muffins are baked from flour with the addition of carob, a substitute for cocoa. This chocolate taste will not be addictive. Enjoy!
For muffins you will need:
- flour - 1 and 1/2 tbsp.;
- sugar - 1 tbsp.;
- carob - 5 tbsp;
- vegetable oil - 6 tablespoons;
- kefir - 1 tbsp.;
- vanillin - 1/2 tsp;
- salt - 1/4 tsp;
- soda - 1 tsp;
- raisins - 1 handful.
For decoration and glaze:
- carob - 3 tbsp;
- sugar - 2 tablespoons;
- water - 4 tablespoons;
- butter - 5 tablespoons;
- nuts - 50 g.
First, sift one and a half cups of flour into a deep bowl. Add the rest of the dry ingredients: one glass of sugar, carob, vanillin, baking soda, a pinch of salt. Stir.
Then pour six tablespoons of vegetable oil into the dry muffin mixture. Rub the butter into the flour mixture with your fingers. Add one glass of kefir at room temperature. Stir gently without kneading. Leave aside for 10-15 minutes for the soda to go out.
During this time, rinse the raisins thoroughly several times and soak them for 10 minutes. After this time, add the raisins to the muffin dough.
Preheat the oven to 180 ° C. Put the muffin dough in the tins, leaving 2 cm. The muffins will still rise in the oven. Bake muffins until tender, 20-25 minutes. Check readiness with a dry wooden stick or a match.
Cut and pan the nuts for decoration: walnuts, hazelnuts, peanuts, and even simple seeds are suitable.
For the icing, combine 3 tablespoons of carob, 2 tablespoons of sugar, 4 tablespoons of water, and 5 tablespoons of oil. Put the mixture on low heat and cook the frosting until thick.
Sprinkle the finished muffins with nuts and icing. Wonderful chocolate muffins are ready.
