Chocolate can be made not only from cocoa, but also from a healthier analogue - carob.

Step 1
Carob is a powder obtained by grinding dried carob pods. Interestingly, these pods are not edible when fresh. Dried pods in powder form have good taste and high nutritional value. In aroma and appearance, carob resembles cocoa powder, but, unlike the latter, it has a very sweet taste, while cocoa powder tastes bitter.
Step 2
There are two types of carob on sale: fried and unroasted.
Roasted, darker in color, with a pronounced chocolate aroma, it is widely used in confectionery, acting as an alternative to cocoa powder. Cakes, pastries, creams and glazes are prepared using carob, even ordinary chocolate can be prepared without cocoa, replacing it with carob.
You can also make drinks from the carob: coffee with chocolate, chocolate drink (cocoa), hot chocolate.
Unfried carob is used to prepare raw desserts and drinks, since such a powder is not thermally processed.
Step 3
To prepare a chocolate drink, it is enough to pour boiling water over the carob, stir, add sugar or sweet Jerusalem artichoke syrup to taste and milk.
Raw foodists can also enjoy a chocolate drink made from carob. To make raw cocoa, you need plant-based milk. This product can be prepared at home, but you can find ready-made vegetable milk in specialty stores. Take one teaspoon of carob, mix with a little vegetable milk. This mixture should be allowed to stand for 5 to 10 minutes. Add the sweetener to taste and the remaining milk.
